Cook rice noodles according to package directions, drain and set aside
Preheat grill to medium-high heat
Toss bell peppers, zucchini, and snap peas with 1 tbsp oil and season with salt
Grill vegetables for 8-10 minutes, turning once, until charred and tender
Whisk together peanut butter, soy sauce, fish sauce, garlic, ginger, lime juice, brown sugar, and coconut milk
Remove vegetables from grill and cut into bite-sized pieces
Toss warm noodles with peanut sauce and grilled vegetables
Garnish with crushed peanuts, green onions, and cilantro before serving
