Cook rice noodles according to package directions, drain and set aside.
Heat oil in a large pot over medium-high heat, add garlic and ginger, cook 1 minute.
Add curry paste and cook 2 minutes until fragrant.
Pour in coconut milk, soy sauce, and brown sugar, bring to a simmer.
Add bell pepper, zucchini, and mushrooms, cook 5 minutes until tender.
Add snow peas and cook 2 minutes more.
Stir in cooked noodles and lime juice, toss to combine.
Garnish with fresh basil and crushed peanuts before serving.
