Cook soba noodles according to package directions, drain and rinse with cold water
In a large bowl, whisk together sesame oil, soy sauce, rice vinegar, and gochujang paste
Add the cooled noodles and toss to coat with dressing
Mix in chopped kimchi, cucumber, carrots, and green onions
Toss everything together until well combined
Sprinkle with sesame seeds and nori strips before serving
Let sit for 15 minutes to allow flavors to meld
