Season chicken with salt, pepper, oregano, lemon zest, and half the lemon juice
Heat olive oil in a large oven-safe pot and brown chicken, about 6 minutes per side
Remove chicken and set aside
Sauté onion and garlic until fragrant, about 3 minutes
Add orzo and toast for 2 minutes
Pour in stock, remaining lemon juice, tomatoes, and olives
Nestle chicken back into pot
Cover and bake at 180°C for 35-40 minutes until orzo is tender
Top with crumbled feta and fresh parsley before serving
