Add cottage cheese to a food processor or high-powered blender and blend for 2-3 minutes until completely smooth and creamy, scraping down the sides as needed.
Add the cocoa powder, maple syrup, orange zest, 2 tablespoons of fresh orange juice, and vanilla extract to the blended cottage cheese.
Blend again for 1-2 minutes until all ingredients are fully incorporated and the mixture is silky smooth.
Drizzle in the melted and slightly cooled dark chocolate while blending on low speed, mixing for 30 seconds until evenly distributed.
Taste and adjust sweetness with additional maple syrup if desired, then transfer mousse to a bowl, cover, and refrigerate for at least 30 minutes to set.
