Cook noodles according to package directions, drain and rinse with cold water
Whisk together sesame oil, soy sauce, rice vinegar, sesame paste, and sugar
Combine cooled noodles with shredded chicken in a large bowl
Add julienned carrot, bell pepper, and scallions
Pour dressing over noodle mixture and toss well
Garnish with chopped peanuts and fresh cilantro
Chill for 15 minutes before serving
Serve cold or at room temperature
