
Comforting one-pot Chinese fish congee with tender white fish, ginger, and scallions. Perfect warming breakfast in under 45 minutes.
Heat oil in large pot over medium heat, add half the ginger and cook until fragrant
Add rice and stir for 2 minutes until lightly toasted
Pour in stock, bring to boil then reduce to gentle simmer for 25 minutes, stirring occasionally
Season fish with salt and pepper, add to pot and simmer 5 minutes until cooked through
Break fish into flakes with spoon, stir in soy sauce and sesame oil
Taste and adjust seasoning, serve topped with remaining ginger and scallions
