Wake up to the flavours of your favourite dessert with these creamy, spiced overnight oats packed with fresh carrots, warm cinnamon, and a luscious cream cheese swirl. Perfect for busy spring mornings when you want a nutritious yet indulgent start to your day.
In a large mixing bowl, combine the rolled oats, milk, Greek yoghurt, grated carrots, maple syrup, cinnamon, ginger, nutmeg, vanilla extract, and a pinch of salt. Stir well until evenly combined.
Fold in the raisins and mix thoroughly to distribute throughout the oat mixture.
Divide the mixture evenly among 4 jars or airtight containers, approximately 200g per serving.
In a small bowl, whisk together the softened cream cheese and honey until smooth and creamy.
Dollop a tablespoon of the cream cheese mixture on top of each jar and use a knife or skewer to create a decorative swirl pattern.
Cover the jars tightly and refrigerate for at least 6 hours or overnight to allow the oats to soften and the flavours to meld.
When ready to serve, remove from the refrigerator and top each portion with chopped walnuts for crunch.
Serve chilled straight from the jar, or transfer to a bowl and enjoy within 3 days of preparation.
