Toss potato and onion slices with 2 tbsp olive oil and salt
Air fry at 180°C for 12 minutes, shaking basket twice
Beat eggs with remaining oil, pepper, and parsley
Let cooked potatoes cool slightly, then fold into beaten eggs
Spray 12 silicone muffin cups with cooking spray
Divide mixture evenly between cups
Air fry at 160°C for 8-10 minutes until set and golden
Cool for 5 minutes before removing from cups
Serve warm or at room temperature
