Season chicken thighs with salt and pepper
Heat olive oil in a large skillet and brown chicken on both sides, about 4 minutes per side
Transfer chicken to slow cooker
Add onions, peppers, garlic, tomatoes, wine, oregano, basil, and bay leaves to slow cooker
Cover and cook on low for 6-7 hours or high for 3-4 hours
Remove bay leaves before serving
Serve over pasta, rice, or with crusty bread
