Creamy one-pot Greek pasta with feta cheese, fresh spinach, and Mediterranean herbs. Ready in 25 minutes for an easy weeknight dinner.
Heat olive oil in a large pot over medium heat. Sauté onion until softened, about 4 minutes.
Add garlic and cook for 1 minute until fragrant.
Add pasta, diced tomatoes, vegetable broth, oregano, and basil. Bring to a boil.
Reduce heat to medium-low, cover and simmer for 12-15 minutes, stirring occasionally until pasta is tender.
Stir in heavy cream and spinach, cook until spinach wilts, about 2 minutes.
Remove from heat, fold in crumbled feta cheese, season with salt and pepper.
Garnish with fresh parsley and serve immediately.
