
These juicy Mediterranean-inspired turkey burgers are packed with fresh herbs, crumbled feta, and sun-dried tomatoes for a lighter twist on a classic. Topped with cool cucumber tzatziki and served on toasted buns, they're perfect for spring grilling.
In a small bowl, combine Greek yogurt, grated cucumber, dill, half the minced garlic, and lemon juice to make tzatziki sauce. Season with a pinch of salt and refrigerate until ready to serve.
In a large bowl, combine ground turkey, crumbled feta, sun-dried tomatoes, fresh oregano, parsley, remaining garlic, dried oregano, salt, and pepper. Mix gently until just combined, being careful not to overwork the meat.
Divide the mixture into 4 equal portions and shape into patties about 2cm thick, making a slight indentation in the center of each to prevent puffing during cooking.
Preheat a grill or grill pan over medium-high heat and lightly oil the grates. Cook the turkey burgers for 5-6 minutes per side until the internal temperature reaches 74°C (165°F) when checked with a meat thermometer.
During the last minute of cooking, toast the brioche buns cut-side down on the grill until lightly golden.
Assemble the burgers by spreading tzatziki sauce on the bottom bun, adding butter lettuce, the cooked turkey patty, sliced tomato, red onion rings, and an extra dollop of tzatziki on top. Cover with the top bun and serve immediately.
