Hard boil eggs for 10 minutes, then transfer to ice bath to cool completely
Peel eggs and cut in half lengthwise, removing yolks to a bowl
Mash yolks with mayonnaise, sour cream, half the cotija cheese, lime juice, chili powder, and salt
Mix until smooth and creamy, adjusting seasoning as needed
Spoon or pipe yolk mixture back into egg white halves
Top each with remaining cotija cheese, a sprinkle of chili powder, and chopped cilantro
Chill for at least 30 minutes before serving
