Heat oil in large cast iron skillet over medium heat
Add sliced onions and cook until caramelized, about 8 minutes
Add garlic, cumin, paprika, and chipotle powder, cook 1 minute
Stir in roasted poblanos and cook 2 minutes
Add beans and mash roughly with potato masher
Add bean liquid gradually until desired consistency reached
Season with salt and simmer 5 minutes
Top with crumbled queso fresco before serving
