In a bowl, combine the chopped mint, minced garlic, olive oil, lemon juice, red wine vinegar, oregano, cumin, salt, pepper, and chilli flakes to create the marinade.
Pat the lamb chops dry with paper towels and place them in a shallow dish or resealable bag.
Pour the marinade over the lamb chops, ensuring each chop is well coated. Cover and refrigerate for at least 1 hour, or up to 4 hours for best results.
Remove the lamb chops from the refrigerator 20 minutes before cooking to bring them to room temperature.
Preheat your grill or grill pan to high heat and lightly oil the grates.
Grill the lamb chops for 3-4 minutes per side for medium doneness, ensuring the internal temperature reaches at least 63°C (145°F) for safe consumption.
