Preheat grill and place a large cast iron skillet on grates
Toss diced potatoes with 1 tbsp olive oil and half the salt, grill in skillet for 15 minutes stirring occasionally
Season beef with paprika, garlic powder, remaining salt and pepper
Push potatoes to one side, add beef to skillet and cook 5-6 minutes until browned
Add bell pepper and onion, cook 4-5 minutes until vegetables soften
Create 4 wells in the mixture, crack eggs into each well
Cover skillet and cook 6-8 minutes until egg whites set
Top with cheese and green onions before serving
