
Tender cod fillets with crispy lemon-herb potatoes, all made in the air fryer. A complete Greek-inspired meal in under 30 minutes.
Toss quartered potatoes with 2 tbsp olive oil, half the lemon juice, garlic, oregano, salt and pepper
Air fry potatoes at 200°C for 15 minutes, shaking basket halfway
Season cod fillets with remaining olive oil, lemon juice, thyme, salt and pepper
Make space in air fryer and add cod fillets alongside potatoes
Add olives and capers to basket
Continue cooking 8-10 minutes until fish flakes easily and potatoes are golden
Garnish with fresh parsley and serve with lemon wedges
