Season chicken thighs with salt, pepper, and oregano
Heat olive oil in a pan and brown chicken on both sides, about 3 minutes per side
Place sliced onion in slow cooker bottom
Add browned chicken to slow cooker
Mix lemon juice, minced garlic, and remaining oregano in a bowl
Pour lemon mixture over chicken
Add kalamata olives around chicken
Cook on low for 6 hours or high for 3 hours
