Preheat oven to 425°F and line a sheet pan with parchment paper
Pat black beans dry and combine with bell pepper, snap peas, and mushrooms on the sheet pan
Whisk together sesame oil, tamari, rice vinegar, ginger, and garlic
Toss bean and vegetable mixture with sauce until evenly coated
Roast for 18-20 minutes until vegetables are tender and beans are slightly crispy
Remove from oven and sprinkle with sesame seeds and green onions
Serve warm bean mixture in butter lettuce cups with sriracha on the side
