In a medium bowl, combine softened cream cheese, squeezed dry spinach, chopped artichoke hearts, mozzarella, Parmesan, minced garlic, onion powder, salt, and black pepper. Mix until well combined.
Unroll the crescent dough and separate into 8 triangles along the perforated lines.
Place approximately 1.5 tablespoons of the spinach artichoke filling onto the wide end of each crescent triangle.
Roll up each triangle from the wide end to the point, tucking the sides in slightly to seal the filling.
Preheat the air fryer to 160°C (320°F) for 3 minutes.
Lightly brush the air fryer basket with olive oil or line with parchment paper. Arrange the roll-ups in a single layer, leaving space between each.
Brush the tops of the roll-ups with olive oil and sprinkle with dried Italian herbs.
Air fry at 160°C (320°F) for 8-10 minutes, until golden brown and cooked through.
Let cool for 2-3 minutes before serving. Enjoy warm with marinara sauce or extra spinach artichoke dip if desired.
