Preheat oven to 425°F and line a large sheet pan with parchment paper
Pat chickpeas completely dry with paper towels and set aside
In a large bowl, combine olive oil, za'atar, paprika, cumin, cayenne, garlic powder, and salt
Add chicken pieces to the spice mixture and toss to coat evenly
Add dried chickpeas to the same bowl and toss with remaining spice mixture
Spread chicken and chickpeas in a single layer on the prepared sheet pan
Roast for 15-18 minutes, stirring once halfway through, until chicken is cooked and chickpeas are crispy
Remove from oven and immediately drizzle with lemon juice
Sprinkle with fresh parsley and let cool for 5 minutes before serving
