Layer chicken chunks in bottom of slow cooker
Add daikon, carrots, onion, and shiitake mushrooms
Whisk together dashi, soy sauce, mirin, sugar, sake, and ginger
Pour liquid mixture over ingredients in slow cooker
Cover and cook on LOW for 6-7 hours until chicken is tender
Remove ginger slices and stir in sesame oil
Taste and adjust seasoning with additional soy sauce if needed
Serve hot garnished with chopped green onions
