Heat olive oil in skillet, sauté onion until softened
Add garlic, cook 1 minute more
Stir in rice, coating with oil for 2 minutes
Add diced tomatoes, oregano, mint, salt, and pepper
Mix in pine nuts, raisins, dill, and parsley
Stuff bell peppers with rice mixture
Place stuffed peppers in slow cooker
Pour vegetable broth around peppers
Cover and cook on low 4-5 hours until peppers are tender
Top with crumbled feta in last 15 minutes
Let rest 10 minutes before serving
