Season chicken thighs with salt, pepper, and half the oregano
Layer rice in bottom of slow cooker
Place seasoned chicken thighs over rice
Whisk together broth, lemon juice, olive oil, garlic, remaining oregano, and thyme
Pour liquid mixture over chicken and rice
Top with diced onion and lemon slices
Cook on low for 4-5 hours until rice is tender and chicken reaches 165°F
Remove chicken, shred if desired, and return to slow cooker
Stir in feta cheese and fresh parsley before serving
