Heat olive oil in large heavy-bottomed pot over medium heat
Sauté onion until translucent, add garlic for 1 minute
Add rice and stir for 2 minutes until edges are translucent
Pour in wine and stir until absorbed
Add warm stock one ladle at a time, stirring constantly
Steep saffron in 1/4 cup hot stock, add after 10 minutes of cooking
Add seafood in final 5 minutes of cooking
Stir in butter and Parmesan off heat
Garnish with parsley and serve immediately
