Mix cooked rice with olives, sun-dried tomatoes, feta, pine nuts, 2 tablespoons olive oil, oregano, lemon zest, and garlic
Season rice mixture generously with salt and pepper
Stuff each bell pepper with rice mixture, packing gently
Brush pepper exteriors with remaining olive oil
Preheat grill to medium heat with indirect cooking setup
Place stuffed peppers on cooler side of grill, cover, and cook 25-30 minutes until peppers are tender
Garnish with fresh parsley and serve hot
