Grilled tomatoes stuffed with herb-infused orzo, feta, and olives. A fresh Mediterranean side perfect for summer BBQs.
Cook orzo according to package directions, drain and cool
Cut tops off tomatoes and scoop out flesh, reserving pulp
Chop tomato pulp and mix with orzo, feta, olives, herbs, and garlic
Season mixture with salt, pepper, and 2 tbsp olive oil
Stuff tomatoes with orzo mixture and brush with remaining oil
Preheat grill to medium heat
Grill stuffed tomatoes for 12-15 minutes until tender
Let cool for 5 minutes before serving
