Preheat oven to 400°F and line baking sheet with parchment
Whisk together soy sauce, mirin, brown sugar, rice vinegar, and ginger for teriyaki sauce
Toss vegetables with sesame oil and arrange on one side of baking sheet
Place salmon fillets on other side and brush with half the teriyaki sauce
Bake 15-18 minutes until salmon flakes easily
Serve over rice, drizzle with remaining sauce, and garnish with green onions and sesame seeds
