Preheat oven to 375ยฐF and butter a sheet pan
Mix warm rice with 1 tbsp soy sauce, mirin, and sesame oil
Spread rice evenly on the buttered sheet pan
Create 6 shallow wells in the rice
Crack eggs into the wells
Whisk remaining soy sauce with sugar and drizzle over
Bake 12-15 minutes until egg whites are just set
Sprinkle with scallions, torn nori, and sesame seeds
Serve immediately with pickled vegetables
