Heat oil in large heavy pot over medium heat
Add cumin seeds and let splutter for 30 seconds
Add onions and cook until golden brown, 6-8 minutes
Add ginger and garlic, cook 2 minutes
Stir in turmeric, coriander, and chili powder, cook 1 minute
Add tomatoes and cook until softened, 5 minutes
Add potatoes, cover and cook 10 minutes, stirring occasionally
Add cauliflower, garam masala, and salt
Cover and cook 15-20 minutes until vegetables are tender
Garnish with fresh cilantro before serving
