Preheat oven to 425°F and line a large sheet pan with parchment paper
Brush baguette slices with 1 tbsp olive oil and arrange on one side of the sheet pan
Toast bread for 8-10 minutes until golden and crispy, then remove and set aside
Toss cooked lentils with remaining olive oil, minced shallot, thyme, tarragon, vinegar, Dijon mustard, salt, and pepper
Spread lentil mixture on the sheet pan and roast for 12-15 minutes until heated through and slightly crispy
Spread goat cheese on toasted baguette slices
Top each crostini with warm lentil mixture and sprinkle with toasted walnuts and microgreens before serving
